Jain American Chopsuey | Sanjeev Kapoor Khazana

JAIN AMERICAN CHOPSUEY

Ingredients

1 cup boiled noodles
1 tablespoon oil + for deep-frying
½ cup tomato ketchup
¼ cup red chilli sauce
1 tablespoon cornstarch
Black pepper powder to taste
5-6 babycorn, diagonally sliced
1 medium green capsicum, cut into strips
1 medium yellow bell pepper, cut into strips
1 small cabbage, shredded
Salt to taste
½ teaspoon sugar
1 teaspoon vinegar

Method

1. Heat sufficient oil in a kadai.
2. To prepare sauce, heat tomato ketchup in a non-stick pan. Add chilli sauce and mix well. Add cornstarch and some water, mix well and cook for a minute. Add pepper powder, mix and bring to boil or till it thickens.
3. Deep-fry boiled noodles in hot oil till golden and crisp. Drain on absorbent paper.
4. Heat 1 tablespoon oil in a non-stick pan. Add baby corn and sauté for a minute. Add green capsicum, bell pepper, mix and cook on low heat for 30 seconds.
5. Add cabbage, mix and cook for 30 seconds. Add pepper powder, salt and sugar, mix and cook for 2-3 minutes.
6. Add prepared sauce and mix well. Add some water, mix and cook for a minute. Add vinegar, mix and cook for a minute.
7. Place the fried noodles in a serving plate. Put some vegetable-sauce mixture on top.
8. Serve hot garnished with some yellow bell pepper strips.

Cooking Time: 10-12 minutes
