Jain Corn Tamatar Nu Shaak Jain Recipes Sanjeev Kapoor Khazana

Spicy, creamy and yet superbly Jain, even without the onion and garlic. Serve hot with parathas.

TOMATO MOZZARELLA TOAST

Ingredients

2 large tomatoes
100 grams mozzarella cheese
8 multigrain bread slices
Extra virgin olive oil to drizzle
Salt to taste
Red chilli flakes to sprinkle
2 tsps chopped fresh parsley
2 tbsps chopped black olives
tsp dried mixed herbs
Crushed black peppercorns to taste
Butter as required
4 tsps garlic mayo
Shredded fresh basil leaves as required

Method

1. Thinly slices mozzarella cheese and tomato and transfer on a plate. Drizzle olive oil, sprinkle salt, red chilli flakes, parsley, olives , dried herbs, crushed peppercorns and mix well.
2. Apply butter and garlic mayo on all bread slices. Arrange the tomato slices on 4 bread slices.
3. Arrange mozzarella on top and sprinkle some basil on top. Cover with remaining 4 slices.
4. Preheat a sandwich griller and place the prepared sandwiches. Grill for 5-6 minutes or till crisp.
5. Cut into halves and serve hot.
