These Bangladeshi style kebabs are called Jali Kebabs because they are coated in a delicate, crunchy egg net or jali while frying. The ‘jali’ adds a bit of texture to the otherwise melt-in-the-mouth kebabs and makes dishing them out a lot of fun too! BANvsSL #WorldCricEAT #CWC19JALI KEBABIngredients2 tsps cumin seeds2 tsps fennel seeds4-5 coves2 tbsps coriander seeds6-8 black peppercorns3-4 mace blades7-8 all spice (kebab chini)5-6 green cardamoms2-3 dried red chillies2-3 bread slices300 grams mutton mince2 medium white onions, chopped1 tsp ginger paste2 tsps garlic paste1-2 green chillies, chopped1 tbsp freshly chopped mint leaves2 tbsps freshly chopped coriander leaves2 tbsps fried onions¼ tsp nutmeg powder1½ tsps red chilli powderSalt to taste4 eggsDried breadcrumbs as requiredOil for deep frying Tomato ketchup to serveMethod1. Dry roast cumin seeds, fennel seeds, cloves, coriander seeds, black peppercorns, mace blades and kebab chini, green cardamoms, and dried red chillies in a pan till fragrant.2. Transfer the spices into a blender jar and blend to a fine powder. 3. In a large bowl, add bread slices and ½ cup water, mash well. Set aside.4. Take mutton mince in another large bowl, add white onions, ginger paste, garlic paste, green chillies, chopped mint, chopped coriander, fried onions, nutmeg powder, and 2 ½ tsps of the prepared spice blend.5. Add red chilli powder and salt. Mix well and squeeze excess water from the bread slices and add to the mutton mixture. 6. To make the kebabs, take a portion of the mixture and shape it into a kebab. Set aside.7. Break eggs in a bowl, add salt and whisk well. Spread dried bread crumbs on a plate. 8. Dip each kebab in the eggs mixture and coat all over with bread crumbs. 9. Heat sufficient oil in a kadai, dip each kebab in the eggs mixture and drop them into the hot oil.10. Drizzle the egg mixture on top of each to form net. Flip them and drizzle the egg mixture again on top. Deep fry till golden and crisp. Drain on an absorbent paper and transfer on a serving plate.11.
