A classical Konkani preparation that is made using fresh and sour raw mangoes that add a tantalizing linger of tanginess after every bite. KAIRICHI AMTIIngredients2 medium raw mangoes (kairi)1½ cups scraped fresh coconut1 inch ginger piece5 dried red chillies8-10 garlic cloves2 tbsps coriander seeds2 tbsps oil1 tsp mustard seeds¼ tsp asafoetida (hing)10-12 curry leaves¼ tsp turmeric powderSalt to tasteA pinch of sugarFresh coriander sprig for garnishMethod1. Cut raw mango into wedges and discard the seed.2. Put coconut in a blender jar, add ginger, dried red chillies, garlic, coriander seeds and ¾ cup water and blend to a fine paste.3. Heat oil in an earthenware pot, add mustard seeds and let them splutter. Add asafoetida and curry leaves and sauté for a few seconds.4. Add blended paste, turmeric powder, salt and sugar and mix well. Add 1 cup water and mix.5. Add raw many wedges and mix, cover and cook on medium heat for 10 minutes. Switch the heat off, transfer the kairichi amti in a serving bowl.6.
