Ingredients:
Wheat Flour: 1 Cup
Salt: a pinch
Ghee: 4 Tablespoons
Semolina: 1/2 a Cup
Cashews: 10 to 12 finely chopped
Almonds: 7 to 8 finely chopped
Desiccated Coconut: 1 1/4 Cup
Cardamom Powder: 1 Teaspoon
Sugar: 1 Cup
Jaggery Grate: 3/4 Cup
Roasted Gram: 1 Cup (Putnala Pappu)
Sesame Seeds: optional can be added if desired.

Method of Preparation:
Initially take 1 Cup of Wheat Flour to a mixing bowl, add a pinch of salt, 3 Tsp of Ghee.
Mix them all well, knead it into a fine dough with some water to it.
Grease some oil to the dough, let it sit for 1/2 an hour.
In meantime will prepare the stuffings for the Sweet fried Dumplings.
For the first variant, heat 2 Tbs of Ghee in a pan.
Add 10 to 12 finely chopped Cashews and 7 to 8 Almonds (optional), let for a minute.
Add 1/2 a cup of Semolina ( Upma/ Bombay Rava), roast it until aromatic & change in color.
Add 1 Cup of Desiccated Coconut fry for a while, put off the flame.
Add 1 Cup of Sugar, more sugar can also be added as per our choice.
Mix them all well, add 1/2 a tsp of Cardamom Powder mix well and place aside.
Now, will prepare the 2nd variant for the stuffing, add 1 Cup of Roasted Gram to the Mixie Jar.
Grind it coarsely, add 3/4 Cup of Jaggery grate and grind it once.
Add 1 Cup of desiccated Coconut(optional), mix well with a closed lid once.
Transfer the ground mixture to a mixing bowl, add 2 Tsp of Ghee.
Any dry fruits of our choice can be added. place aside for a while.
Now knead the dough once, make small lemon sized portions.
Grease the rolling stone & pin with some oil.
Now, roll the dough ball into a moderate-sized Poori.
Add t1 Tsp of the 1st variant of the mixture as stuffing on the Poori.
Fold the Poori from the other side and cover the stuffing, as in the video.
Fold it tight and press it with Gujjiya maker / Pizza Cutter.
Remove the excess dough and press the Kajjikaya well to avoid the stuffing from coming out.
In the same way, fills in / stuff the variant as stuffing fold and press.
Make a few, heat oil for deep frying them on medium flame.
Now deep fry them all on Low-Medium flame for a minute.
Flip turn them and let fry on either side as well until brown and crisp.
Tasty, awesome Kajjakayalu are ready.
