Crisp kanda bhajiya - made in two very different ways - you decide which one you like better. KANDA BHAJI - (Serves - 4)Ingredients3 large onions (kanda/pyaaz), peeled¼ cup gram flour (besan)Oil for deep-fryingSalt to taste1 tablespoon chopped fresh coriander leaves1 teaspoon coriander powder¼ teaspoon turmeric powder2 teaspoons red chilli powder½ teaspoon carom seeds (ajwain)8-10 curry leaves1 teaspoon red chilli flakes½ teaspoon chaat masalaMethod1. Halve and slice onions and transfer in a glass dish and mix to separate the layers using fingers.2. Heat sufficient oil in a kadai. 3. Add salt to sliced onions and mix. Add coriander leaves, turmeric powder, 1½ teaspoons chilli powder, carom seeds and coriander powder and mix well. 4. Add gram flour and mix well to make a thick mixture. 5. Drop in small portions of onion mixture in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper. 6. Deep-fry curry leaves in the same hot oil till crisp. Drain on absorbent paper, transfer in a bowl and crush them using fingers to make fine powder. 7. Add chilli flakes and chaat masala to curry leaves powder and mix. Add remaining chilli powder and mix well. 8. Sprinkle some curry powder mixture on top of fried bhajiyas and mix well. 9. Serve hot.KANDA BHAJI WAFFLE - (serves - 4)Ingredients3 large onions (kanda/pyaaz), peeled¼ cup gram flour (besan)Salt to taste1 tablespoon chopped fresh coriander leaves1 teaspoon red chilli powder + for garnishing¼ teaspoon turmeric powder + for garnishing1 teaspoon coriander powder½ teaspoon carom seeds (ajwain)Oil for greasing Tadka raita¼ cup yogurt2 teaspoons oil¼ teaspoon cumin seeds (jeera)½ teaspoon mustard seeds4-5 curry leavesA pinch of red chilli powderMethod1. Halve and slice onions, transfer in a bowl and mix to separate the layers using fingers.2. Preheat a waffle iron. 3. Add salt to sliced onions and mix. Add coriander leaves, 1 teaspoon chilli powder, ¼ teaspoon turmeric powder, coriander powder and carom seeds and mix well. 4. Add gram flour and mix well to make a thick mixture. 5. Grease the preheated waffle iron with some oil. Spread the onion mixture, cover and cook till golden brown and crisp from both sides. Remove from waffle. 6. To prepare tadka raita, take yogurt in a bowl and whisk. 7. Heat oil in a tempering pan. Add cumin seeds and when it changes colour, add mustard seeds and let it splutter. Add curry leaves and let it crackle. Add chilli powder and remove from heat. 8. Add the tempering to yogurt and mix well. 9. Garnish a serving platter with some chilli powder and turmeric powder. Put some tadka raita and spread using a spoon.10. Cut bhaji waffles into 2 equal triangles, place on the serving platter and serve hot.
