Kathiyawali Thali | Kathiyawadi Bhojan | Unknown Western Gujarati Cuisine | Crazy For Indian Food

If you love Gujarati Thali then you will surly going to like Kathiyawadi Meal. Kathiyawad is very popular for its unique Cuisine. Indian Village Recipe are alway traditional and more authentic then you find in an Gujarati Restaurant of any other Kathiyawadi Restaurant. In cities like Ahmedabad, Vadodara, Surat, Rajkot, Jamnagar, etc you will find huge numbers of Restaurant serving Kathiyawadi Dishes.
INGREDIENTS:
Vegetables: Brinjal different types, Carrot, ginger, garlic, garlic and onion greens, Cabbage, Tomato
Spices:
Salt, turmeric, cumin seeds, asafetida, split mustard & coriander seeds, Coriander & cumin powder
METHOD OF COOKING:
1. Roast whole brinjal in direct fire or charcoal til skin color changes.
2. Allow it to cool, then peel its skin, mash keep aside.
3. Heat oil in kadi, add cumin seeds, add chopped garlic, chopped onion saute, add chopped onion-garlic greens, stir and fry in low flame for few minutes.
4. Add mashed brinjal to this kadai mixture, stir and cook for some time.
5. Transfer into another bowl.
CARROT PICKLE:
1. Wash carrot, chop them into 1 inch finger size shape put into vessel.
2. Add salt, turmeric powder, hing, split mustard and coriander seeds, add oil.
3. Mix all of them slowly and evenly.
