Get ready to spice up your iftar with this mouth-watering Khasta Aloo Puri Chaat, featuring crispy potatoes and a tantalizing blend of chutneys! #Foodfusion #happycookingtoyou #ramzanspecial #digitalammi Written Recipe: https://bit.ly/42X6WTaRecipe in English:Ingredients:Prepare Potato Stuffing:-Cooking oil 2 tbs-Pyaz (Onion) chopped 1 Cup-Adrak lehsan paste (Ginger garlic paste) 1 & tsp-Namak (Salt) tsp or to taste-Lal mirch powder (Red chilli powder) 1 tsp or to taste -Amchor powder (Dried mango powder) 1 tsp-Zeera (Cumin seeds) roasted & crushed 1 tsp-Sabut dhania (Coriander seeds) crushed 1 tsp-Aloo (Potatoes) boiled 2 medium-Hari mirch (Green chilli) chopped 1 tbs-Hara dhania (Fresh coriander) chopped 1 tbsPrapare Hari Chutney Raita:-Dahi (Yogurt) 1 & Cup-Hara dhania (Fresh coriander) half bunch-Podina (Mint leaves) half bunch-Lehsan (Garlic) 3-4 cloves-Hari mirch (Green chillies) 5-6-Zeera (Cumin seeds) 1 tsp-Namak (Salt) tsp or to taste-Kala namak (Black salt) tsp-Water 2-3 tbs or as required-Lemon juice 2 tbs Prepare Kachori:-Maida (All-purpose flour) sifted 2-3 Cups-Chawal ka atta (Rice flour) 2 & tbs-Namak (Salt) 1 tsp or to taste-Ajwain (Carom seeds) 1 pinch-Ghee (Clarified butter) 3-4 tbs-Water 1 Cup or as required-Cooking oil for frying Assembling:-Chanay (Chickpeas) boiled-Meethi Chutney-Pyaz (Onion) rings-Chaat masala-Lal mirch (Red chilli) crushed-Nimco sev-Anaar (Pomegranate seeds)Directions:Prepare Potato Stuffing:-In frying pan,add cooking oil,onion & saut until translucent.-Add ginger garlic paste & mix well.-Add salt,red chilli powder,dried mango powder,cumin seeds,coriander seeds,mix well & cook for 1-2 minutes.-Add potatoes & mix well.-Turn off the flame & mash well with the help of masher.-Turn on the flame & mix well.-Add green chilli,fresh coriander,mix well & cook for a minute.-Let it cool.Prapare Hari Chutney Raita:-In a blender jug,add yogurt,fresh coriander,mint leaves,garlic,green chillies,cumin seeds,salt,black salt,water,lemon juice,blend well & set aside.Prepare Kachori:-In a bowl,add all-purpose flour,rice flour,salt,carom seeds & mix well.-Add clarified butter & mix well until it crumbles.-Gradually add water,mix well & knead until dough is formed,cover & let it rest for 15 minutes.-Knead dough again until smooth. -Take a small dough (30g) & make a ball.-Take small quantity of potato stuffing and place in the center of the dough then fold & seal all edges to make a ball.-Grease working surface with cooking oil & spread the dough with the help of fingers. -In a wok,heat cooking oil & fry kachori on low flame until golden & crispy (makes 19-20).Assembling:-On serving plate,break puri & add chickpeas,hari chutney raita,meethi chutney,onion rings,chaat masala, red chilli crushed,nimco sev,pomegranate seeds & serve!Recipe in Urdu:Directions:Prepare Potato Stuffing:-Frying pan mein cooking oil aur pyaz dal dein aur translucent hunay tak saut ker lein.-Adrak lehsan paste dal ker ache tarhan mix karein.-Namak,lal mirch powder,amchor powder,zeera & sabut dhania dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.-Aloo dal ker ache tarhan mix ker lein.-Chulha bund ker dein aur masher ki madad sa ache tarhan mash ker lein.-Chulha on karein aur ache tarhan mix ker lein.-Hari mirch aur hara dhania dal ker ache tarhan mix karein aur ek minute kliya paka lein.-Thanda ker lein.Prapare Hari Chutney Raita:-Blender jug mein dahi,hara dhania,podina,lehsan,hari mirchein,zeera,namak,kala namak,pani aur lemon juice dal ker ache tarhan blend ker lein & side per rakh dein.Prepare Kachori:-Bowl mein maida,chawal ka atta,namak aur ajwain dal ker ache tarhan mix ker lein.-Ghee dal dein aur crumble ho janay tak mix ker lein.-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 15 minutes kliya rakh dein.-Dough ko smooth hunay tak dubara ghond lein.-Chota dough (30g) lein aur ball bana lein.-Aloo stuffing ki small quantity lein aur dough ka center mein rakh dein aur edges ko fold ker lein aur seal ker ka ball bana lein.-Working surface ko cooking oil sa grease ker lein aur dough ko fingers ki madad sa pheela lein.-Karahi mein cooking oil garam karein aur kachori ko halki ancch per golden & crispy ho janay tak fry ker lein (makes 19-20).Assembling:-Serving plate mein puri tor ker dal dein,chanay,hari chutney raita,meethi chutney,pyaz rings,chaat masala,lal mirch crushed,nimco sev aur anaar dal ker serve karein!
