Khichdi Recipe ( One pot Rice-Lentils recipe), Ayurvedic recipes | Eat East Indian

Khichdi is a one pot dish made with rice and lentils. It is an ayurvedic dish which helps with upset tummy or when someone is sick and can't seem to keep anything down. It also balances our doshas. Here is my version of simple Khichdi which is perfect comfort food for chilly fall days.

Ingredients:

1 cup rice
1 cup yellow lentils ( moongi daal)
1 tsp cumin seeds
1-2 tbsp desi ghee ( Clarified butter)
1/2 cup onions
3-4 garlic cloves chopped
6 cups of water
1 tsp salt
1 tsp turmeric

Method:
Melt ghee in a cooker and add cumin seeds. Fry for 30 secs and add onions, garlic and cook for 2-3 mins. Add rice and lentils ( washed and perhaps soaked for 15-20 mins to an hr) along with water;. Cover the cooker and cook for 2 whistles. Let cooker cool down before opening it. Serve with homemade Dahi or lemon pickle. Enjoy!
