This recipe of khichdi is the one that got Chef Sanjeev Kapoor the Guinness World Record.KHICHDI Ingredients1½ cups short grain rice, soaked ½ cup split green gram (moong dal), soaked 2 tablespoons sorghum (jowar), soaked2 tablespoons pearl millet (bajra), soaked 3 tablespoons finger millet (ragi), soaked3 tablespoons amaranth, soaked¼ cup ghee + for drizzling1 teaspoon cumin seeds (jeera)A pinch asafoetida (hing)20-24 curry leaves1 inch ginger, finely chopped1-2 green chillies, finely chopped1 medium carrot, peeled and finely chopped5-6 French beans, finely chopped¼ cup green peas¼ teaspoon turmeric powderSalt to tasteFried curry leaves for garnishing Method1. Heat ghee in a non-stick pan. Add cumin seeds and sauté till the seeds change colour. 2. Add asafoetida, curry leaves, ginger, green chillies and carrot, mix and sauté for a minute. 3. Add French beans and green peas and mix well. Add sorghum, pearl millet, finger millet and amaranth, mix, cover and cook for 2 minutes. 4. Add green gram, rice, turmeric powder and salt and mix well. Add 4 cups water, stir, cover and cook till fully done. 5. Drizzle some ghee on top, garnish with curry leaves and serve hot.
