An exclusive tempering of garlic and chilli powder in healthy groundnut oil, makes for such an exciting snack with rice flour and loads of flavourful spices; Khichu is surely a must-try for all!

KHICHU

Ingredients

1½ cups rice flour
3 tbsps groundnut oil
2 tbsps chopped garlic
1 tsp Tata Sampann Chilli Powder
Salt to taste
2 inch ginger piece, sliced
3 green chillies
1 tsp cumin seeds
1 tbsp freshly chopped coriander leaves
Coriander sprig for garnish

Method

1. Heat oil in a non-stick shallow pan, add garlic and sauté well. Add Tata Sampann Chilli Powder and salt. Mix well and cook for 2-3 minutes, sautéing occasionally and take it off the heat. Set aside.
2. In a chopper, add ginger, green chillies and coarsely chop them.Set aside.
3. Heat 3¼ cups water in a non-stick deep pan, add ½ tsp of the prepared ginger-green chilli mixture.
4. Add cumin seeds, salt and allow the mixture to come to boil. Add rice flour and mix till well combined using a rolling pin.
5. Cover and steam for 3-4 minutes or till the mixture comes together and forms a dough. Occasionally keep stirring.
6. Add chopped coriander and mix well. Take it off the heat.
7. Place a portion of the prepared mixture on a serving plate. Drizzle a portion of the garlic-red chilli mixture on top. Garnish with coriander sprig and serve hot.
