An exclusive tempering of garlic and chilli powder in healthy groundnut oil, makes for such an exciting snack with rice flour and loads of flavourful spices; Khichu is surely a must-try for all! KHICHUIngredients1½ cups rice flour3 tbsps groundnut oil2 tbsps chopped garlic1 tsp Tata Sampann Chilli PowderSalt to taste2 inch ginger piece, sliced3 green chillies1 tsp cumin seeds1 tbsp freshly chopped coriander leavesCoriander sprig for garnishMethod1. Heat oil in a non-stick shallow pan, add garlic and sauté well. Add Tata Sampann Chilli Powder and salt. Mix well and cook for 2-3 minutes, sautéing occasionally and take it off the heat. Set aside.2. In a chopper, add ginger, green chillies and coarsely chop them.Set aside.3. Heat 3¼ cups water in a non-stick deep pan, add ½ tsp of the prepared ginger-green chilli mixture.4. Add cumin seeds, salt and allow the mixture to come to boil. Add rice flour and mix till well combined using a rolling pin.5. Cover and steam for 3-4 minutes or till the mixture comes together and forms a dough. Occasionally keep stirring.6. Add chopped coriander and mix well. Take it off the heat.7. Place a portion of the prepared mixture on a serving plate. Drizzle a portion of the garlic-red chilli mixture on top. Garnish with coriander sprig and serve hot.
