Kolkata Special Vegetable Chop | Vegetable Cutlet | Vegetable Fritters | Poulami Chatterjee

Kolkata Special Vegetable chop is a very popular street food in Bengal. The main ingredients for these chops are beetroot, carrot, peanuts and the special Bengali bhaja masala. Bengali style vegetable chop is very different in taste as compared to regular vegetable cutlet or vegetable fritters, mainly because of the addition of our special bhaja masala (roasted spices). I don’t like peanuts, so I didn't add them in my recipe. But adding peanuts give a nice crunchy texture to the chop. If you want an authentic Kolkata style vegetable chop then adding peanuts is a must.

Ingredients -
For Masala
4-5 bay leaves
6-7 cloves
1 cinnamon stick
½ tsp cumin seeds
½ tsp coriander seeds
½ tsp black peppercorn
½ tsp fennel seeds

Main Ingredients
2 tbsp oil
1 tsp panchphoron
1 tbsp ginger paste/grated
3-4 green chillies chopped
1 large beetroot peeled and cut into 3 cm long matchsticks
1 large carrot peeled and cut into 3 cm long matchsticks
salt to taste
2 medium potatoes steamed/boiled(before adding mash potatoes properly)
¼ cup green peas
1½ tbsp sugar
1 tsp amchur/dry mango powder
1 tbsp ghee

For Coating
2 tbsp maida/all purpose flour
2 tbsp corn flour
pinch of salt
water as required
1 cup breadcrumb
⅓ cup maida/all purpose flour
