Kolkata Style Chicken Cutlet Or Fowl Cutlet (Street Style) | Chef Ananya Banerjee

Kolkata Style Chicken Cutlet Or Fowl Cutlet is a famous minced chicken cutlet which is a popular street food in Kolkata as the name suggest. It is one of the best options for evening snacks. This chicken cutlet is rarely found in other states except West Bengal and the original taste is hard to come by. However, you would not have to miss out on the original taste of the ‘fowl cutlet’ if you follow the recipe video shared here.

Ingredients:
250 gm chicken keema
1⁄2 cup onions minced
1 tsp ginger paste
1 tsp garlic paste
handful of Coriander leaves finely chopped
2 tbs green chili paste
1 tbs ketchup
1 tb bhaja moshla
1⁄2 tsp Garam masala
2 tbs Lemon juice
1 large egg beaten
1/2 cup maida
Salt to taste
Plain bread crumbs 2 cups
Oil for deep fry

Method:
Marinate chicken mince and add graram masala and bhaji Masala, ginger paste, garlic paste, chopped onions, coriander leaves, green chili paste, red chilli powder, cumin powder, lemon juice and salt. Keep aside for an hour.

Take a portion from the chicken mince, dust some maida on it and dip in egg batter and then coat it with breadcrumbs and give diamond shape. The diamond shape is unique to fowl cutlet

Heat oil in a pan and fry the cutlets till golden brown. Remove cutlets in a paper towel and serve hot with kasundi or ketchup
