Kozhukattai
Idiappam or Kozhukattai flour - 1 cup
Freshly grated coconut - 1 cup
Powdered Jaggery - cup
Water - cup


Cardamom - to taste
Ghee - tsp
Til oil - as reqd
Method for the Pooran:
Add the jaggery to a heavy Kadai
Add some water to cover the jaggery
Just allow the jaggery to melt
Allow the syrup to come to a rolling boil
Add the grated coconut
Keep cooking together over medium flame till the water evaporates
The Pooran should be non sticky
Switch off flame
Add tsp ghee and mix well
Allow the Pooran to come to room temperature
Method for the outer covering:
Add 1 cup of water to a Kadai
Add a pinch of salt
When the water comes to a rolling boil, add a dash of til oil
Add 1 cup of Kozhukattai flour slowly to the boiling water and combine well together
Switch off flame
Close the Kozhukattai flour tightly with a lid
Keep aside for 15 mins or so
Meanwhile divide and roll the Pooran into roundels
Assemble Kozhukattai:
Return to the outer covering and open the lid
Add drops of hot water make a soft dough out of the flour
Now divide the dough into roundels
Shape each one into a cup using drops of oil and stuff with Pooran roundel
Close it shaping like a Modak
Do the same with the entire batch
Steam the stuffed Kozhukattai for 10 mins or till they look glossy
