Kung Pao Chicken with Vegetable Fried Rice

Ingredients for Fried Chicken:
Boneless chicken 300 g
Corn flour 2 tbsp
Soy sauce 3 tbsp
Egg white 1
Vinegar 1 tbsp
Oil (for frying) as required

Ingredients for Slurry:
Chicken stock 1 cup
Water 1/4 cup
Corn flour 3 tbsp
Black soy sauce 2 tbsp
Vinegar 1 tbsp

Ingredients for Kung Pao Chicken:
Oil 3 tbsp
Garlic (chopped) 1 tbsp
Ginger (chopped) 2 tbsp
Fried chicken
Capsicum (cubes) 1 cup
Onion (cubes) 1 cup
Chicken stock 2 cups
Slurry 1/2 cup
Black pepper powder 1 tsp
Green onion as required
Roasted peanuts (1/4 cup)
Ingredients for Vegetable Fried Rice:
Oil 2 tbsp
Garlic (chopped) 1 tbsp
Capsicum 1 cup
Cabbage 1 cup
Carrots 1 cup
Soy sauce 2 tbsp
Chili sauce 2 tbsp
Black pepper powder 1 tsp
Salt 1 tsp
Boiled rice 2 cups

Directions for Fried Chicken Preparation:
1. In a bowl add boneless chicken, corn flour, soy sauce, egg white, vinegar and mix well. Marinate for 10 minutes.
2. Deep fry the marinated chicken and cook the chicken until chicken is 80% done. Set aside.
Directions for Slurry Preparation:
3. In a bowl add chicken stock, water, corn flour, black soy sauce, vinegar and mix well. your slurry is ready.
Directions for Kung Pao Chicken Preparation:
4. In a pan heat oil and add garlic and ginger, cook for a minute.
5. Add fried chicken, capsicum, onion and cook for 2-3 minutes.
6. Add chicken stock and cook until starts to simmer.
7. Add black pepper and mix well. Add slurry and cook until starts to thicken.
8. Add green onion and roasted peanuts and cook for a minute. Your Kung Pao Chicken is ready.
Directions for Vegetable Fried Rice Preparation:
9. In a pot heat oil and add garlic, cook for a minute. Add capsicum, cabbage, carrot and cook for 3-4 minutes.
10. Now add soy sauce, chili sauce, and mix it well. Add boiled rice, salt, black pepper and mix well over high flame.
11. Garnish with green onion and serve. Your Vegetable Fried Rice is ready. Serve with Kung Pao Chicken and enjoy.

Cooking time: 40-45 mins
