LACEY CHICKENIngredients4 chicken legsMarination1 small fresh coriander bunch8-10 garlic cloves1 inch ginger, roughly chopped2-3 green chillies½ lemonSalt to taste½ tsp turmeric powder2 tsps coriander powder1 tsp cumin powder½ tsp garam masala powder1 tbsp tandoori masalaLace3 eggsSalt to tasteCrushed black peppercorns to taste½ tsp red chilli powderOil for deep fryingTo serveGreen chutneyMethod1. To make the marination, put 1 small coriander bunch in a blender jar. Add garlic cloves, ginger, green chillies, squeeze the juice of lemon and ¼ cup water and blend to a fine paste.2. Make deep cuts on both sides of the chicken legs and sprinkle salt and add the blended paste. Add turmeric powder, coriander powder, cumin powder, garam masala powder, tandoori masala and rub the mixture well on each chicken leg. Set aside to marinate for 30 minutes. 3. Arrange the chicken pieces along with the marination in a deep pan and place the pan on heat. Cover and cook for 10-15 minutes on low heat. Take the pan off the heat.4. Break in the eggs in a bowl, add salt, crushed black peppercorns and red chilli powder and whisk with a fork. 5. Heat sufficient oil in a kadai, dip each chicken piece into the eggs mixture and slide into the hot oil. Deep fry chicken pieces one at a time till golden and crisp and drain on absorbent paper. 6.
