Grate the carrots in a large bowl, add salt, mix and set aside for 6-8 hours. 2. Take sultanas, dried dates, raisins, dried apricots, 1 cup sugar cane malt vinegar and soak for 6-8 hours.3. Take yellow mustard seeds in a bowl, add ¼ cup sugar cane malt vinegar and set aside for 6-8 hours.4. Take jaggery in a large bowl, add remaining sugar cane malt vinegar and mix till the jaggery melts.5. Add the carrots, soaked dried fruits, soaked mustard seeds, red chilli powder, turmeric powder and cumin powder and mix.6.
