LAGAN NU ACHAAR

Ingredients

2-3 medium carrots
¼ cup sultanas
4-5 dried dares
2 tbsps raisins
7-8 dried apricots
1¾ cups sugar cane malt vinegar
2 tbsps yellow mustard seeds
¾ cup chopped jaggery
1 tsp red chilli powder
½ tsp turmeric powder
1 tsp cumin powder

Method

1. Grate the carrots in a large bowl, add salt, mix and set aside for 6-8 hours.
2. Take sultanas, dried dates, raisins, dried apricots, 1 cup sugar cane malt vinegar and soak for 6-8 hours.
3. Take yellow mustard seeds in a bowl, add ¼ cup sugar cane malt vinegar and set aside for 6-8 hours.
4. Take jaggery in a large bowl, add remaining sugar cane malt vinegar and mix till the jaggery melts.
5. Add the carrots, soaked dried fruits, soaked mustard seeds, red chilli powder, turmeric powder and cumin powder and mix.
6. Add salt, mix and transfer into an air tight container, cover and set aside in a dark place for 8 days.
