Chikar Cholay

Ingredients for Boiled Chanay:
Soaked White Chickpeas (Safaid Chanay) 3 cups
Water as required
Salt 1 tsp

Ingredients for Potato Chickpeas Paste:
Boiled White chickpeas 1 cup
Boiled potato 1
Water as required

Ingredients for Chikar Cholay:
Oil 1/4 cup
Ginger Garlic Paste 1 tbsp
Onion paste 1/2 cup
Salt 1 tsp / to taste
Red chili powder 1 tbsp
Turmeric powder 1 tsp
Black pepper powder 1 tsp
Water 1/4 cup + 1/2 cup
Potato chickpeas paste
Cinnamon sticks 2-3
Black cardamom 2
Cumin powder 1 tbsp
Coriander powder 1 tbsp
Garam masala powder 1 tbsp
Boiled white chickpeas 2 cups
Yogurt 1 cup
Reserved white chickpeas stocks 3 cups
Green chilies (for garnishing) as required
Onion rings (for garnishing) as required

Directions for Boiled Chanay Preparation:
1. In a pot heat water and bring it to a boil. Add white chickpeas, salt and boil for 30-35 mins or until chickpeas are 80% done. Reserve the stock for later use.
Directions for Potato Chickpeas Paste Preparation:
2. In a glass jar add boiled potato, boiled chickpeas, water and blend it well into paste. Set aside.
Directions for Chikar Cholay Preparation:
3. In a pot heat oil and add ginger garlic paste. Cook for 30 seconds.
4. Add onion paste and cook for 2-3 mins. Add salt, red chili powder, turmeric powder, black pepper powder and mix it well. Add 1/4 cup of water and mix it again.
5. Add potato chickpeas paste and mix it well. Add 1/2 cup of water and cook for 2 mins.
6. Now add coriander powder, garam masala powder, cumin powder, black cardamom, cinnamon sticks and cook for 1-2 mins.
7. Now add boiled white chickpeas, yogurt and mix it well.
8. Add White chickpeas stock and cover and cook for 15-20 mins or until chickpeas are fully done.
9. Now dish it out, garnish with onion rings, green chilies and serve with naan. Your Chikar Cholay are ready.
