Lasagna Roll Ups - Mind Over Munch Episode 32

Quick Easy Homemade Vegetarian Lasagna! This healthy lasagna recipe makes conveniently pre-portioned ROLL-UPS! One of my FAVORITE low carb low calorie vegetarian recipes! I also introduce you to my alter-ego Sylvia Dunleavy... you'll just have to watch for yourself to find out! Enjoy!

RECIPE

Ingredients
4 lasagna noodles
1 cup homemade pasta sauce
1/4 cup black beans
1/3 cup onions
2 tsp garlic
1 cup spinach
1/3 cup cottage cheese
1 oz mozzarella cheese
1 Tbsp parmesan

Procedure
Boil lasagna noodles until tender and al dente.
In the meantime, saut onions, garlic and spinach in a little cooking spray. Once cooked, mix with cottage cheese and mozzarella. Set aside.
Preheat oven to 425F.
When noodles are cool to the touch, place on a sufficient work space.
Spread 1 Tbsp pasta sauce, 1 Tbsp black beans, and about 1/4 of the spinach mixture on each noodle.
Fill the bottom of a 5x7 baking dish with about 1/2 cup pasta sauce.
Roll up filled noodles and place in baking dish (all 4 fit in one dish). Top with remaining 1/4 cup pasta sauce and parmesan.
Bake roll-ups for 20 minutes, until cheese begins to brown on top as desired.
Devour!
