Click for more Mind Over Munch Episodes: http://bit.ly/1z1ytBtRECIPEIngredients4 lasagna noodles1 cup homemade pasta sauce1/4 cup black beans1/3 cup onions2 tsp garlic1 cup spinach1/3 cup cottage cheese1 oz mozzarella cheese1 Tbsp parmesanProcedureBoil lasagna noodles until tender and al dente.In the meantime, saut onions, garlic and spinach in a little cooking spray. Once cooked, mix with cottage cheese and mozzarella. Set aside.Preheat oven to 425F.When noodles are cool to the touch, place on a sufficient work space.Spread 1 Tbsp pasta sauce, 1 Tbsp black beans, and about 1/4 of the spinach mixture on each noodle.Fill the bottom of a 5x7 baking dish with about 1/2 cup pasta sauce.Roll up filled noodles and place in baking dish (all 4 fit in one dish).
