A very comforting recipe of rice and grains mixed with spinach and tempered with a fragrant and delicious garlic tempering.

LASOONI PALAK KHICHDI

Ingredients

1½ tbsps finely chopped garlic
1¼ cups blanched spinach puree
200 grams Tata Sampann 6 Grain Khichdi Mix
1 tbsp ghee
First tempering
2 tsps oil
1 inch ginger, finely chopped
1-2 green chillies, chopped
1 large onion, finely chopped
Salt to taste
½ lemon
Second tempering
1 tbsp ghee
1 tsp cumin seeds
3-4 garlic cloves, sliced
1-2 dried red chillies
A pinch of dried fenugreek leaves (kasuri methi)

Method

1. Wash Tata Sampann 6 Grain Khichdi Mix with sufficient water for 1-2 times.
2. Heat ghee in a pressure cooker, add the Tata Sampann 6 Grain Khichdi spice premix and sauté for a few seconds. Add the washed grains and mix well.
3. Add 3 cups water and mix. Cover and cook under pressure till 5 whistles are released.
4. Switch the heat off and allow the pressure to reduce completely.
5. To make the first tempering, heat ghee and oil in a non-stick pan. Add garlic and sauté for a few seconds.
6. Add ginger and green chillies and mix well.
7. Add onion, mix and cook till it turns translucent. Add spinach puree, mix and cook for a minute.
8. Add the cooked grain mix into the spinach mixture and mix well. Add salt and 1 cup water, mix and cook for 4-5 minutes.
9. Squeeze the juice of lemon, mix and switch the heat off. Transfer the mixture into a serving bowl.
10. For the second tempering, heat ghee in another non-stick pan. Add cumin seeds and sliced garlic and sauté till it turns golden brown.
11. Add dried red chillies and dried fenugreek leaves and mix. Take the pan of the heat and pour the tempering over the khichdi and serve hot.
