In this episode, we're delving into a classic cocktail from Jimmy Late of SOS, published in Toronto in 1930. It's called The Tuxedo, featuring Old Tom Gin, vermouth, maraschino, absinthe, and orange bitters.I've chosen two different Old Tom Gins for this mix; one is the Wit Old Tom Gin from a local distillery in Prince Edward County, and the other is a widely available mass-market Old Tom Gin. We'll be using French white dry vermouth in equal measure to the gin.Adding a dash of absinthe and maraschino to each, along with a couple of dashes of orange bitters, we'll ice and shake each concoction individually. As you'll see, the colors of the gins are distinctly different, contributing to the visual appeal of the final result.The Wit Old Tom Gin boasts unique flavors from local botanicals like sumac, giving it a striking color. It's perfect for a Tom Collins, though we haven't tried that yet. The second Old Tom Gin has its own flavor profile, making this a delightful exploration of the Old Tom style.As we sip and savor these concoctions, you'll notice the refreshing nature of each cocktail. The first is more gin-forward, while the second has a subtler gin flavor with additional complexities.
