LEMON POUND CAKE

PREP TIME: 15 MINUTES
BAKE TIME: 1 HOUR
SERVES: 6-8

INGREDIENTS
2 cups soft flour
cup sugar
75g butter , melted.
2 eggs, beaten.
cup milk
1 tsp baking powder
Salt
cup lemon juice
2 tbsp lemon zest

For lemon syrup
2 tbsp sugar
2 tbsp lemon juice

DIRECTION
Pre- heat oven at 170c.
In a mixing bowl, whisk together, sugar, melted butter and eggs until fluffy then add lemon juice, milk , whisk and set aside.
Mix flour with baking powder, salt and set aside.
Stir in the flour bit by bit into the butter mixture until you have a smooth consistence then add lemon zest and stir in.
Grease loaf pan with cooking spray/butter and pour the mixture in.
Bake at 170c for 1 hour until golden brown .
Bring sugar and lemon juice to a boil
Use a toothpick to make holes on top of the cake and drizzle the lemon syrup over the cake.
Lemon pound cake ready to serve warm or cold
