Lifafa Egg Paratha
Ingredients for Dough Preparation:
All-purpose flour 2 cups
Salt 1/2 tsp
Ghee 2 tbsp
Water as required

Ingredients for Egg Mixture:
Beaten eggs 3
Onion (chopped) 1/4 cup
Red chili powder 1/2 tsp
Salt 1/4 tsp
Cumin powder 1/4 tsp
Tomatoes (chopped) 2 tbsp
Capsicum (Chopped) 2 tbsp
Green coriander (chopped) 2 tbsp
Black Olives (chopped) 2 tbsp
Green onion (chopped) 2 tbsp
Garlic powder 1/2 tsp
Black pepper powder 1/4 tsp

Directions for Assembling:
Paratha dough
ghee (for brushing) as required
Cheese slices 2
Egg mixture
Ghee as required

Directions for Dough Preparation:
1. In a bowl add flour, salt, ghee and mix well. Now add water and knead a smooth and soft dough. Cover it with cloth and let it rest for 20 minutes.
Directions for Egg Mixture Preparation:
2. In a bowl add eggs, onion, red chili powder, salt, cumin powder, tomatoes, green coriander, olives, green onion, garlic powder, black pepper powder and mix well. Your egg mixture is ready.
Directions for Assembling:
3. Take the dough and cut it into 4 equal parts and make dough balls of each. Roll the dough ball into flat circle shape with the help of rolling pin, spread ghee on it and fold to make square shape. Now roll it down again with rolling pin into square shape.
4. Now transfer it on pre-heated pan, spread the egg mixture and cheese slices evenly on top. Fold it into square shape, brush ghee on it and cook each side on low medium flame until light golden and crispy.
Preparation time: 10-15 mins
Cooking time: 20-25 mins
Serving: 4-5
