Music: Shenandoah - American folk song
Arrangement and piano: Elvan A. ULUCINAR

In this episode, I'd like to share with you a very easy and light 'Tiny Donuts' recipe. They don't taste too sweet, so you can increase the amount of granulated sugar. Or dip them in powdered sugar generously ,like I do. These Donuts taste also great with some jam, so hope you give this amazing recipe a try!

INGREDIENTS
150 gr. (0.33 pounds) Turkish Lor Cheese or drained Ricotta
1 egg
1 cup flour
1 pack (1 tbsp) vanilla sugar
1 pack baking powder
3 tbsp granulated sugar
A pinch of salt
Powdered sugar
Sunflower oil for frying

DIRECTIONS
Combine granulated sugar with the egg, in a big bowl.
Add lor cheese or ricotta, mix.
Using a mixer, beat well for about 2-3 minutes.
Sift vanilla sugar, baking powder, salt and flour on top.
Mix with a spoon.
Beat shortly to combine, for about 7-8 seconds.
Bring the dough together with your hands, making sure not to over-knead.
It should be a very soft and only slightly sticky dough.
Line a tray with parchment paper.
Pull off walnut sized pieces of dough and roll into balls, transfer to the tray.
You can also shape them into rings, if desired.
Grease your hands lightly with some oil if needed, and repeat the same until all is done.
To adjust the temperature of the oil, shape 1 tiny miny ball.
Heat enough oil for deep-frying, over medium heat.
I use a saucepan and 2 cups oil.
When the oil is hot, drop the tiny miny ball carefully.
And cook until nicely browned, stirring occasionally.
Then transfer into a wire colander to drain, the oil should be ready to start cooking Donuts.
Working in batches, carefully drop them into the hot oil and cook until nicely browned on each side, for about 2-3 minutes, stirring occasionally.
Transfer into the colander and repeat the same until all is done.
Let cool for 5 minutes.
Then coat Donuts generously with powdered sugar and transfer into a serving plate.
Sift lot more powdered sugar on top.
Let cool completely and enjoy, they taste amazingly delicious!
