Lime Noodles with Basil | Sanjeev Kapoor Khazana

Flat noodles tossed with fresh cut vegetables burning with basil and lime flavour.

LIME NOODLES WITH BASIL

Ingredients

1 tablespoon lemon juice
1 cup flat noodles, boiled
6-8 fresh basil leaves + for garnishing
2 spring onions with greens
1 tablespoon butter
1 medium carrot, grated
1 medium red bell pepper, cut into medium size strips
1 medium yellow bell pepper, cut into medium size strips
5-6 broccoli florets, blanched
Salt to taste
1 teaspoon castor sugar
2 teaspoons toasted sesame seeds + sprinkling

Method

1. Slice spring onion bulbs.
2. Heat butter in a non-stick pan. Add chopped spring onion bulbs and sauté for a minute. Add carrot and mix well. Add bell peppers and toss to mix.
3. Add noodles and toss to mix. Add broccoli and torn basil leaves and mix well.
4. Add salt, castor sugar, sesame seeds and lemon juice and mix well.
5. Chop spring onion greens, add to the pan and toss to mix.
6. Sprinkle some sesame seeds and serve hot garnished with a basil leaf.

Preparation Time: 5-8 minutes
Cooking Time: 15-20 minutes
