Love letters cookies recipe

Love letter cookies. If you want to surprise your kids with a cute sweet idea for valentine you might want to try this recipe. I used a no fail Italian shortbread recipe (its a keeper!) I didnt use butter but oil as a fat so that I didnt have to refrigerate the dough but I could use it right away. You save time. For the filling I tried strawberry jam, raspberry jam and chocolate spread. All approved by the kids.

Ready to bake?

INGREDIENTS:
2 eggs
100gr sugar (1/2 cup)
80ml avocado oil (7 Tbsp or 3.5oz)
320gr all purpose flour (2 1/3 cups)
1 tsp baking powder
1 tsp baking soda
Zest one orange

Filling: strawberry jam
Powdered sugar to dust on top

Bake in the preheated oven to 400F for 12/15 min pending the size of the letters. Mine were around 3x2 inches.
