Mac N Cheese | The Food Hippie | Sanjeev Kapoor Khazana

Mac and cheese is made of wickedly creamy cheesy sauce, al dente macaroni and a golden, buttery, crunchy topping of parmesan. Comfort food at its best!

MAC N CHEESE

Ingredients

2 cups boiled macaroni
50 grams cheddar cheese
30 grams mozzarella cheese
1 tablespoon butter
1 teaspoon oil
1 tablespoon chopped garlic
1 cup shimeji mushrooms
6-7 button mushrooms, cut into quarters
1 bacon strip
2 cups milk
1½ tablespoons refined flour (maida)
Salt to taste
Crushed black peppercorns to taste
¼ teaspoon Tabasco sauce
1-2 fresh parsley sprigs
Bacon parsley crumb
4-5 bacon strips
4-5 fresh parsley sprigs
3-4 tablespoons dried breadcrumbs
1 tablespoon parmesan cheese powder
Crushed black peppercorns to taste

Method

1. Preheat oven to 180° C.
2. Heat butter and oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add shimeji mushrooms and button mushrooms and sauté for 2-3 minutes.
3. Cut 1 bacon strip into small pieces, add to pan and sauté till fully done and crispy.
4. To prepare bacon parsley crumb, chop bacon strips and parsley sprigs and transfer in a bowl. Add breadcrumbs, parmesan cheese powder and crushed peppercorns and mix well.
5. Heat milk in a small deep non-stick pan.
6. Add flour to mushroom mixture and sauté for 1 minute. Add 1½ cups hot milk, mix and cook till the mixture thickens.
7. Grate in cheddar cheese, switch off heat and mix. Grate in mozzarella cheese and mix till it melts.
8. Add remaining hot milk and mix. Add salt, crushed peppercorns and Tabasco sauce.
9. Chop parsley sprigs, add to pan and mix. Add macaroni and mix well.
10. Put the macaroni mixture in an oval glass baking dish and spread the prepared bacon crumb on top covering it.
11. Put the dish into the preheated oven and bake for 12-15 minutes.
12. Serve hot.
