Macaroni Pie... So Much Better Than Macaroni And Cheese!This is a take on the classic Trini Macaroni Pie Recipe - Something we've eaten many other places in the Caribbean, and something that we eat here at home in Toronto all the time. Ingredients:500g (1 lb) uncooked pasta, long macaroni / bucatini / zitoni30 mL (2 Tbsp) butter1 - 376 mL can evaporated milkEnough milk or cream to make up 500 mL (2 cups)500g (1 lb) cheddar cheese, grated500g (1 lb) mozzarella, grated2 eggs 10 mL (2 tsp) granulated garlic10 mL (2 tsp) onion powder30 mL (2 Tbsp) ketchup10 mL (2 tsp) dry mustard5 mL (1 tsp) white pepperScotch Bonnet or Habanero finely chopped10 mL (2 tsp) green seasoningMethod:Pre-heat oven to 180C (350F).Cook pasta as directed on the package, until just barely cooked.Drain and toss with the butter to coat.Add evaporated milk to a large measuring cup and then add milk or cream to make up 2 cups. Whisk in eggs, garlic powder, onion powder, ketchup, mustard, hot pepper, black pepper, and green seasoning.Arrange a layer of the long pasta in the bottom of a 9 x 12 baking dish.Pour in milk mixture to cover, then sprinkle in cheese to cover.Repeat, in layers, ending with cheese on top.Bake for about 25-30 minutes covered, then uncover and bake another 15-20 minutes until brown.We no longer do sponsorships or paid promotions of any kind; we tried it a couple of times but it never felt right.
