Madeleines. That little French butter cake that most (non-French) people think of more as a cookie. They have a classy, literary reputation these homemade madeleines are light and airy with crisp edges and have a delicious buttery lemon flavor. MADELINES - (Serves - 4)Ingredients1 cup refined flour3 eggs2 tablespoons brown sugar½ cup castor sugar1 teaspoon vanilla essence½ teaspoon baking powder¼ teaspoon saltZest of ½ lemonMethod1. Preheat oven at 180ºC. 2. Cream together eggs, brown sugar, castor sugar and vanilla essence in a bowl till light and well combined. 3. Sieve together flour, baking powder and salt into the bowl. Grate in the lemon zest and fold well.4. Fill a piping bag with the prepared mixture and pipe into a silicon madeline mould tray. Put the tray in the preheated oven and bake for 10-15 minutes.
