Stay tuned for some recipes soon!MADRAS CURRY POWDERIngredients1 cup coriander seeds1 tbsp black peppercorns1 tsp fenugreek seeds1 tbsp cumin seeds1 tbsp fennel seeds10-12 cloves1 tsp mustard seeds1 inch cinnamon stick10-12 green cardamoms10-12 dried red chillies, stemmed20-25 curry leaves2 bay leaves½ tsp asafoetida (hing)6-8 garlic cloves, sliced and fried¼ cup fried onions1½ tsps turmeric powderSalt to tasteMethod1. Heat a pan. Add coriander seeds, black peppercorns, fenugreek seeds, cumin seeds, fennel seeds, cloves, mustard seeds, cinnamon, green cardamoms, dried red chillies and dry roast for 2-3 minutes.2. Add curry leaves, bay leaves and dry roast for a minute.3. Add asafoetida and mix well. Transfer in a bowl and allow to cool.4. Add garlic, fried onions and mix well.5. Transfer into a blender jar, add turmeric powder, salt and grind to fine powder.6.
