Have you ever tried a halwa with the flavour of corn kernels? If not, try this lip-smacking version and you will be left licking your fingers.

MAKAI KA HALWA

Ingredients

1½ cups sweet corn kernels (makai)
¼ cup ghee
1½ tbsps semolina (rava)
1 tbsp gram flour (besan)
¼ tsp green cardamom powder
A large pinch of saffron
¾ cup sugar
¼ cup chopped mixed nuts + for garnish
Silver warq for garnish

Method

1. Put makai in a blender jar and blend to a coarse paste.
2. Heat ghee in a non-stick pan, add semolina and gram flour and sauté till golden brown and fragrant.
3. Add blended paste, mix and sauté for 8-10 minutes or till the mixture turns golden brown.
4. Add 2½ cups hot water, mix, cover and cook for 6-8 minutes.
5. Add sugar, mix, cover and cook for 6-8 minutes or till the sugar melts and the mixture thickens.
6. Add mixed nuts, mix and continue to cook for 4-5 minutes. Switch the heat off.
7. Serve hot garnished with silver warq and mixed nuts.
