The sweet corn kernels make for a perfect texture.MAKAI KE PAKODEIngredients1 cup sweetcorn kernels3 tablespoons gram flour (besan)2-3 green chillies, finely chopped2 teaspoons chopped fresh coriander leaves2 teaspoons chopped fresh mint leaves¼ teaspoon turmeric powder1 teaspoon red chilli powderSalt to tasteA pinch of sugar2 teaspoons lemon juice1 tablespoons oil + for deep-frying1 whole fried green chilli for garnishingMethod1. Mix together sweetcorn kernels, 2 tablespoons gram flour, green chillies, coriander leaves, mint leaves, turmeric powder, red chilli powder, salt, sugar, lemon juice with little water in a mixing bowl. Add the remaining gram flour and mix once again. Add 1 tablespoon hot oil instead of baking soda. 2. Heat sufficient oil in a pan. Drop small portions of the prepared mixture and deep-fry until golden-brown and crispy. Drain on absorbent paper. 3. Transfer to a serving bowl and serve hot garnished with fried green chilli.
