Makai or Corn ke Pakode are a simple, but irresistibly tasty. The sweet corn kernels make for a perfect texture.

MAKAI KE PAKODE

Ingredients

1 cup sweetcorn kernels
3 tablespoons gram flour (besan)
2-3 green chillies, finely chopped
2 teaspoons chopped fresh coriander leaves
2 teaspoons chopped fresh mint leaves
¼ teaspoon turmeric powder
1 teaspoon red chilli powder
Salt to taste
A pinch of sugar
2 teaspoons lemon juice
1 tablespoons oil + for deep-frying
1 whole fried green chilli for garnishing

Method

1. Mix together sweetcorn kernels, 2 tablespoons gram flour, green chillies, coriander leaves, mint leaves, turmeric powder, red chilli powder, salt, sugar, lemon juice with little water in a mixing bowl. Add the remaining gram flour and mix once again. Add 1 tablespoon hot oil instead of baking soda.
2. Heat sufficient oil in a pan. Drop small portions of the prepared mixture and deep-fry until golden-brown and crispy. Drain on absorbent paper.
3. Transfer to a serving bowl and serve hot garnished with fried green chilli.
