I saw Will Horowitz from Ducks Eatery turning a radish into Prosciutto so I thought maybe I could turn it into beef and make an Arby's roast "RADISH" Beef! Making Roast Beef from Radish 1 Watermelon Radish 1 egg - egg replacer. I use Bobs red mill (follow the instructions for your egg replacer)1 teaspoon black pepper teaspoon garlic powder teaspoon liquid smoke pound course kosher salt Brine 1 cups water cup Soy sauce cup rice vinegar cup olive oil teaspoon liquid smoke teaspoon smoked paprika teaspoon garlic powder teaspoon onion powder teaspoon black pepper 1 teaspoon marmite 1 teaspoon dried italian parsley 2 pinches of koshar salt Wash the radish well under cold water Preheat oven to 425f Whisk your egg replacer and its liquid together and add black pepper, garlic powder, and liquid smoke. Coat the outside of your radish in the egg replacer seasoning mixture Coat the outside in kosher salt in a large baking dishCook salted coated radish for 40 minutes at 425f Crack off the salt layer Slice radish in half and allow to cool Brine Add all of your brine ingredients to a sauce pan, whisk together and bring to a boil. Slice your radish on a mandolin slicer very thin. Place the slices in a large container and top with your brine. Let set refrigerated overnight.Next day remove from brine, heat in a steamer for 30 minutes!
