Making Utak-Utak (Tausug Delicacy)

UTAK-UTAK
Ingredients:
kg tuna, cut into huge chunks
1 pc red onion, chopped
3 cloves garlic, minced
1 pc thumb-size ginger, minced
1 pc 3-inch turmeric
tsp salt
tsp pepper
cup grated coconut
cup flour
1 pc egg
1 tbsp water

Procedure:
1. Boil tuna for 3-5 minutes and shred using a fork. Set aside.
2. Mix and pound your fish, onions, garlic, ginger, turmeric, salt, and pepper.
3. Combine flour, egg, and water.
4. For cup of the mixture into a patty. Dip in the batter and fry in hot oil until golden brown. Repeat for the remaining ingredients and serve. Makes 4 servings.
