The food is generally fresh, aromatic and flavored.MALABAR PANEERIngredients 250 grams cottage cheese (paneer), cut into 1 inch cubes1 tablespoon oil + for deep-frying1 teaspoon mustard seeds 5-6 curry leaves 2 green chillies, slit 1 medium onion, finely chopped 1 tablespoon ginger-garlic paste ¼ teaspoon turmeric powder 1 cup coconut milk Salt to tasteMethod 1. Heat sufficient oil in a kadai. Deep-fry cottage cheese cubes till golden brown. Drain on absorbent paper.2. Heat oil in a non-stick pan. Add mustard seeds and let the seeds splutter. Add curry leaves, green chillies and onions, mix and sauté till onion turns translucent. 3. Add ginger-garlic paste, mix well and sauté for 1-2 minutes. Add turmeric powder and mix well. 4. Add fried cottage cheese cubes and mix well. Add coconut milk, mix and cook for 1-2 minutes. Add salt and mix well. 5. Serve hot.
