Malai Chicken Curry | मलाई चिकन करी | FoodFood

MALAI CHICKEN CURRY

Ingredients:

500 gram chicken legbone less, cut into 1 inch cubes
2 tbsps ghee
8-10 green cardamoms
2 green chillies
1 medium onion, quartered
2 tbsps melon seeds (magaz)
12-15 cashew nuts
3-4 garlic cloves
Salt to taste
¼ cup yogurt
½ tsp green cardamom powder
Crushed black peppercorns to taste
Fresh cream for drizzling
Micro greens for garnish

Method:

1. Heat 1 tbsp ghee in a pressure cooker, add 4-5 green cardamoms, break and add the green chillies. Add onion, melon seeds, cashew nuts, garlic cloves and sauté for 1-2 minutes.
2. Add 1 cup water and cover the cooker. Cook till 3-4 whistles are released. Allow the pressure to reduce completely.
3. Open the cooker and blend the mixture till smooth.
4. For the gravy, heat remaining ghee in a non-stick kadai, add remaining green cardamoms, chicken and salt. Sauté for 2-3 minutes.
5. Strain the prepared paste into the kadai and mix well. Add yogurt and adjust salt, mix well and cook for 12-15 minutes or till the chicken is cooked completely.
6. Add green cardamom powder, crushed black peppercorns and mix well. Cook for 2-3 minutes and take the pan off the heat.
7. Transfer into a serving bowl and drizzle fresh cream on top. Garnish with micro green and serve hot.
