Prawns cooked with rice in malwani masala to make this flavourful pulao.MALWANI PRAWN PULAOIngredients20-25 medium prawns, deveined, cleaned and washed1½ cups Daawat Pulav Basmati Rice Salt to taste¼ tsp turmeric powderMalwani masala1 cup fresh scraped coconut1 medium onion, finely chopped½ tsp turmeric powder7-8 garlic cloves2 tsps coriander seeds10-12 dried red chillies, soaked for 20 minutes and drainedPulao2 tbsps oil1 tbsp chopped garlic1 large onion, finely chopped3-4 kokum petals1½ cups thin coconut milk Salt to tasteMethod1. Wash Daawat Pulav Basmati Rice with sufficient water for 2-3 times, add fresh water, soak for 20 minutes and drain. 2. Take prawns in a bowl, add salt and turmeric powder, mix and set aside to marinate for 10-15 minutes.3. Dry roast coconut and onion in a non-stick pan till they turn golden brown. Take the pan off the heat and allow the mixture to cool slightly. 4. Put roasted coconut-onion mixture into a blender jar, add turmeric powder, garlic, coriander seeds, soaked dried red chillies and ¾ cup water and blend to a fine paste. 5. To make the pulao, heat oil in a non-stick pan, add garlic, onion and kokum petals and sauté for 1-2 minutes. 6. Add prawns and sauté on high heat for 1-2 minutes. Add blended malwani masala, mix and cook for 1-2 minutes. 7. Add soaked rice and gently mix. Add coconut milk and adjust salt, mix, cover and cook on low heat for 15-20 minutes.
