These deep fried banana infused puffed up puris are just divine. They taste great with coconut chutney or just on their own.MANGALORE BUNSIngredients½ cup powdered sugar¼ cup yogurt2 yellow ripe bananas1½ cups refined flour (maida)3 tbsps warm ghee¼ tsp baking powder½ tsp salt1 tsp roasted cumin powder1 tbsp oil + for deep fryingCoconut chutney to serveMethod1. Take powdered sugar in a large bowl, add yogurt and mix well. Peel bananas, break into small pieces and add. Mash the pieces using back of the spoon and mix. 2. Add 1 cup refined flour, ghee, baking powder and salt and mix well. Add roasted cumin powder and mix.3. Add remaining flour and knead using your hand till a soft dough is formed. Drizzle 1 tbsp oil and knead again, cover the dough with a damp muslin cloth and set aside for 2 hours.4. Heat sufficient oil in a kadai.5. Divide the dough into equal portions and shape each portion in a ball. Dust the worktop with flour and roll out each portion into small disc. 6. Heat sufficient oil in a kadai, slide one disc at a time and press gently with the back of the spoon till the discs turn golden brown and puffed up. Drain on an absorbent paper.7.
