Todays menu is mango coconut panna cotta.
I made raspberry panna cotta last year, and this year Im making it using fresh mango and coconut milk.
Panna cotta is great for summer dessert because its simple and easy to make. You dont even need an oven.

* ingredients (4 served)
200ml, 200ml, 50g, 1 (* ), 6g, 2
200ml heavy cream, 200ml coconut milk, 50g sugar, 1tsp vanilla extract, 6g gelatin, 2 fresh mangoes for topping

1. 5 .
1. Soak the gelatin for 5 min or until soft.

2. In a small pan, add coconut milk, heavy cream, sugar and vanilla extract and simmer.

3. Bring to the boil, add soaked gelatin and mix well. Remove from the heat and cool until lukewarm.

4. Pour the coconut milk mixture into serving cups and leave it in the fridge for at least 3 hour.

5. Serve with fresh mango.
