Mango Halwa | Mango Jelly | No Agar Agar - No Gelatin | Mango Halwa Recipe

This Mango Halwa is irresistibly sweet and super soft, super simple to make and outrageously delicious.

Ingredients :
~ 3 medium size mangoes, ripened
~ 1/2 cup corn flour
~ 1 cup water
~ 3/4 cup sugar
~ 1 cup water
~ 8 tbsp ghee / clarified butter
~ 1/2 tsp cardamom powder (elaichi)
~ Dry fruits - cashews & raisins

Instructions :
~ In a blender take 3 medium sized ripe mangoes and blend to smooth puree. No need to add water.
~ transfer the mango puree to a bowl.
~ add ½ cup cornflour and 1 cup water.
~ mix well making sure everything is well combined without any lumps. keep aside.
~ in a large pan take ¾ cup sugar and 1 cup water.
~ let the sugar dissolve completely.
~ now add in the mango corn-flour mixture and stir continuously.
~ stir on low to medium flame until the mixture starts to thicken slightly.
~ add 2 tbsp of ghee and continue to stir.
~ again add 2 tbsp of ghee until the mixture absorbs all the ghee.
~ now add 1/2 tsp cardamom powder & 1 tbsp each of cashew and raisins (chopped)
~ again add 2 tbsp ghee and after about 30 minutes the mixture will start to turn glossy.
~ again add 2 tbsp ghee & mix well until the ghee starts to release from the sides and mixture separates from pan.
~ perfect consistency.
~ turn off the flame & transfer the halwa mixture to a greased pan or plate and level it up (spread evenly). Pan or plate should be greased with ghee or oil.
~ cashew (chopped) for decoration.
~ rest for 2 hours at room temperature or until it cools completely.
~ unmould the jelly / halwa and cut into desired shapes.
~ enjoy mango jelly or mango halwa for a week.
