Enjoy! **Ingredients :~ 3 medium size mangoes, ripened~ 1/2 cup corn flour~ 1 cup water~ 3/4 cup sugar~ 1 cup water~ 8 tbsp ghee / clarified butter~ 1/2 tsp cardamom powder (elaichi)~ Dry fruits - cashews & raisins**Instructions :~ In a blender take 3 medium sized ripe mangoes and blend to smooth puree. No need to add water.~ transfer the mango puree to a bowl.~ add ½ cup cornflour and 1 cup water.~ mix well making sure everything is well combined without any lumps. keep aside.~ in a large pan take ¾ cup sugar and 1 cup water.~ let the sugar dissolve completely.~ now add in the mango corn-flour mixture and stir continuously.~ stir on low to medium flame until the mixture starts to thicken slightly.~ add 2 tbsp of ghee and continue to stir.~ again add 2 tbsp of ghee until the mixture absorbs all the ghee.~ now add 1/2 tsp cardamom powder & 1 tbsp each of cashew and raisins (chopped)~ again add 2 tbsp ghee and after about 30 minutes the mixture will start to turn glossy.~ again add 2 tbsp ghee & mix well until the ghee starts to release from the sides and mixture separates from pan.~ perfect consistency.~ turn off the flame & transfer the halwa mixture to a greased pan or plate and level it up (spread evenly). Pan or plate should be greased with ghee or oil.~ cashew (chopped) for decoration.~ rest for 2 hours at room temperature or until it cools completely.~ unmould the jelly / halwa and cut into desired shapes.~ enjoy mango jelly or mango halwa for a week.Music : www.epidemicsound.com
