Mango Tart

Ingredients for Dough:
All-purpose flour 3 cups
Icing sugar 1 ½ tsp
Salt 1 tsp
Butter (chilled) 250 g
Chilled water as required
White beans as required

Ingredients for Mango Mousse:
Mango cubes 1 cup
Whipping cream 2 cups
Mango essence 1 tsp
Gelatin powder + warm water (1 tsp + 1/4 cup)

Ingredients for Mango Jelly:
Mango puree 1 ½ cup
Sugar 1/2 cup
Slurry (corn flour 3 tbsp + water 1/3 cup)

Ingredients for Assembling:
Mango mousse
Mango jelly
Prepared tart
Mango slices
Whipped cream as required


Directions for Dough Preparation:
1. In a bowl add flour, icing sugar, salt and mix well. add butter and mix well to form crumbs.
2. Now add chilled water and knead a smooth dough.
3. Refrigerate the dough for 1-15 minutes.
4. Now transfer the dough onto silicon mat and dust flour. Roll it out into flat circle.
5. Place the rolled out dough into tart pan and cut the extra edges.
6. Prick the dough with fork. Place butter paper on the dough and add white beans to sustain the shape of tart while baking.
7. Bake the tart at 180°C for 20 minutes. Take out of the oven and set aside.
Directions for Mango Mousse Preparation:
8. In a blender add mango cubes and blend into smooth puree.
9. In a bowl add whipping cream and whip until foamy. Add puree into it and fold with the help of spatula.
10. Add gelatin mixture, mango essence and mix well. Your Mango Mousse is ready.
Directions for Mango Jelly Preparation:
11. In a pan filter the mango puree through sieve. Add sugar and cook until sugar dissolves
12. Add slurry and cook until it thickens in consistency.
13. Let it cool at room temperature. Your Mango Jelly is ready.
Directions for Assembling:
14. Remove the beans and butter paper from the tart.
15. Add a layer of mango mousse and mango jelly. Top it with sliced mangoes and whipped cream.
16. Your Mango Tart is ready. Cut a slice and enjoy.
