MANGO QUINOA SALAD - (Serves - 4)IngredientsFor one portion½ medium mango, peeled, deseeded and cut into small pieces½ cup quinoa1 cup vegetable stockSalt to tasteCrushed black peppercorns to taste1 teaspoon red chilli flakes½ medium red bell pepper, finely chop3-4 black olives, pitted and sliced1 tablespoon chopped fresh coriander leaves1 tablespoon lemon juiceFresh coriander leaves for garnishingMethod1. Heat quinoa in a small deep non-stick pan. Add vegetable stock, salt, crushed peppercorns and ½ teaspoon red chilli flakes, mix and bring to boil. Cover and cook till quinoa is done. Remove from heat and cool.2. Take cooked quinoa mixture in a bowl. Add red bell pepper, crushed peppercorns, salt, mango, black olives, coriander leaves, lemon juice and remaining red chilli flakes and mix well. 3.
