Mango Quinoa Salad | Sanjeev Kapoor Khazana

MANGO QUINOA SALAD - (Serves - 4)

Ingredients

For one portion
½ medium mango, peeled, deseeded and cut into small pieces
½ cup quinoa
1 cup vegetable stock
Salt to taste
Crushed black peppercorns to taste
1 teaspoon red chilli flakes
½ medium red bell pepper, finely chop
3-4 black olives, pitted and sliced
1 tablespoon chopped fresh coriander leaves
1 tablespoon lemon juice
Fresh coriander leaves for garnishing

Method

1. Heat quinoa in a small deep non-stick pan. Add vegetable stock, salt, crushed peppercorns and ½ teaspoon red chilli flakes, mix and bring to boil. Cover and cook till quinoa is done. Remove from heat and cool.
2. Take cooked quinoa mixture in a bowl. Add red bell pepper, crushed peppercorns, salt, mango, black olives, coriander leaves, lemon juice and remaining red chilli flakes and mix well.
3. Serve immediately garnished with fresh coriander leaves.
