Mango Salad | Sanjeev Kapoor Khazana

Refreshing use of fresh mangoes in a form of a salad. A great recipe for the weight watchers.

MANGO SALAD

Ingredients

For one portion
½ medium mango, peeled, deseeded and sliced
Few iceberg lettuce leaves
8-10 snow peas
½ small onion, sliced
¼ medium red capsicum, cut into thin strips
½ medium avocado, peeled, deseeded and sliced
Salt to taste
Crushed black peppercorns to taste
Dressing
Juice of ½ lemon
1 tablespoon olive oil
1 tablespoon honey
½ inch ginger, grated
Salt to taste
Crushed black peppercorns to taste

Method

1. To prepare dressing, combine lemon juice, olive oil, honey, ginger, salt and crushed peppercorns in a small jar, cover and shake well.
2. Put few lettuce leaves, snow peas, onion, capsicum strips, avocado slices, mango slices in a serving platter.
3. Sprinkle some salt and crushed peppercorns and drizzle some dressing on top and serve immediately.
