A Rajasthani kadhi which is super easy prep and makes for a hearty meal when paired with steamed rice.MANGODI KADHIIngredients1 cup mangodi¾ cup yogurt2 tbsps gram flour (besan)½ tsp turmeric powderA pinch of red chilli powder4 tbsps ghee1 tsp cumin seeds¼ tsp asafoetida (hing)2-3 dried red chillies2-3 green chillies, chopped1 tbsp chopped garlic1 tbsp chopped ginger2 tbsps chopped fresh coriander leaves Method1. Take ¾ cup curd in a bowl, add gram flour, turmeric powder, red chilli powder and mix well. 2. Heat 2 tbsps ghee in a deep pan, add mangodi and stir fry for 2 minutes or till golden brown. Drain on a plate and set aside. 3. Heat remaining ghee in the same pan, add cumin seeds and let them change colour. Add asafoetida, dried red chillies, green chillies, garlic and ginger and sauté for 1 minute.4. Add fried mangodi and sauté for 1 minute. Add ½ cup water, mix, cover and cook further for 5-6 minutes. 5. Add yogurt mixture, 4 cups water and mix well. Add salt, mix, let the mixture come to a boil, reduce the heat to low and cook further for 8-10 minutes.6. Add coriander leaves, mix and take the pan off the heat.
