मंगोड़ी की सब्ज़ी | Mangodi ki Sabzi | Sanjeev Kapoor Khazana

A delicious sabzi made using mangodi. To make this Rajasthani dish, sauteed Mangodi crush is added into a flavourful curry and cooked to perfection.

MANGODI KI SABZI

Ingredients

1 cup mangodi
2 tbsps ghee
1 tsp cumin seeds
¼ tsp asafoetida (hing)
2 tsps chopped garlic
2 tsps chopped ginger
2-3 green chillies, chopped
2 medium onions, sliced
1 cup fresh tomato puree
½ tsp turmeric powder
1 tsp coriander powder
1½ tsps red chilli powder
Salt to taste
2 tbsps chopped fresh coriander + to sprinkle


Method

1. Heat ghee in a nonstick wok. Add mangodi and sauté on medium heat for 2-3 minutes. Drain and set aside.
2. Add cumin seeds to the pan and once they start to change the colour, add asafoetida, garlic, ginger, green chillies and sauté for 30 seconds.
3. Add onions and sauté till golden brown.
4. Add tomato puree and mix well. Cook till fat separates.
5. Add turmeric powder, coriander powder, red chilli powder, salt and mix well.
6. Crush the mangodis coarsely.
7. Add 1 cup water to the pan and once the mixture comes to a boil, add the crushed mangodis. Add 2 cups water and once the mixture comes to a boil, cover and cook for 15-20 minutes on low heat.
8. Add coriander and mix well.
9. Transfer in a serving bowl, sprinkle some coriander and serve hot.
