Bacon Jam

1lb good quality bacon, diced
2 large red onions, diced
3 cloves of garlic, minced
½ cup maple syrup
½ cup brewed coffee
¼ cup bourbon
2 tbsp balsamic vinegar

In a large dutch oven or heavy-bottomed saucepan, cook bacon until crispy.
Pour bacon into strainer and reserve two tablespoons of bacon fat.
Add onions to pot and cook until very soft and beginning to caramelize, about 12 to 15 minutes.
Add chopped garlic and cook for another 3 to 5 minutes.
Return bacon to pot.
Add maple syrup, coffee, bourbon and balsamic vinegar.
Cook until liquid is almost all evaporated and mixture reaches a thick consistency.
You can serve bacon jam chunky, as-is or run it through the food processor for a smoother texture.
Serve bacon jam in grilled cheese, on burgers, as an accompaniment on a cheese board or even over ice cream.
