Maple syrup and sweet potatoes... a match made in cooking heaven. This side dish recipe will quickly become a family favourite, and end up on every Holiday table.

Ingredients
4 lbs (2 Kg) sweet potatoes
4 tablespoons (60 mL) unsalted butter
¼ cup (60 mL) pure maple syrup
Coarse salt and ground pepper

Method
Preheat oven to 400ºF.
Pierce sweet potatoes all over with a knife.
Place on middle oven rack.
Bake until very tender when pierced with a knife, around 1 hour.
When cool enough to handle, cut sweet potatoes in half.
Then with a spoon, scoop out flesh into a food processor - you can discard the skins.

Add butter and syrup; process until smooth.
Season with salt and pepper.
