Pierce sweet potatoes all over with a knife. Place on middle oven rack. Bake until very tender when pierced with a knife, around 1 hour. When cool enough to handle, cut sweet potatoes in half. Then with a spoon, scoop out flesh into a food processor - you can discard the skins. Add butter and syrup; process until smooth.
