Margarita Chicken (Pollo de Margarita)

It doesn't have to be Cinco de Maya to enjoy this refreshing and tasty chicken. I start with some great chicken from our friends at KOL Foods (www.KOLFoods.com), and then add fresh herbs.

Then I make a sauce with limes, herbs, the finest tequilla couresy of Baron Tequilla, (www.BaronSpirits.com) and then sweeten it all up with some artesian Oregon honey from Honey Ridge Farms. (www.HoneyRidgeFarms.com)

You definitly want to watch the middle to get my special "AviGarita" recipe. A delightfully balanced cocktail that will get your 'ole' in order.

BTW: You can use chicken on the bone or off the bone for this recipe. It pairs great with some herbed rice and garlic yucca or served cold and off the bone the next day on a seasonal salad.
