Something that combines convenience and taste is always a welcome addition to our knowledge bank! All you need to do is perk up leftover idli batter with a horde of common ingredients like onions, green chillies, ginger, and so on, and cook the batter in appe moulds. Voila, an easy and tasty snack is ready to serve with breakfast or enjoy in the evening with tea. You can also try other South Indian recipes like Masala Vadas and Medu Vada.Preparation Time: 10 minutes.Cooking Time: 20 minutes.Makes 21 appes. 1½ cups idli batter¼ cup finely chopped onions1½ tsp finely chopped green chillies¼ tsp asafoetida (hing)1 tbsp finely chopped curry leaves (kadi patta)¼ cup grated coconut½ tsp chilli powder½ tsp ginger (adrak) paste½ tsp freshly crushed freshly ground black pepper (kalimirch)Salt to taste¾ tsp oil for greasing1½ tsp oil for cooking1. Combine all the ingredients in a deep bowl and mix well.2. Heat an appe mould on a medium flame and grease it using ¼ tsp of oil.3. Pour 1 tbsp of the batter into each mould.4. Cook, using ½ tsp of oil, till the lower surface becomes golden brown and then turn each appe upside down using a fork so as to cook them from the other side.5. Repeat with the remaining batter to make more appes.6. Serve immediately with coconut chutney.
