Boiled potatoes cooked in flavourful masalas served in two unique avatars.MASALA BABY POTATOIngredients16-20 baby potatoes, boiled and peeled 4½ tsps ghee1 tsp cumin powder1 tsp garam masala powderSalt to taste1 tsp cumin seeds2-3 fresh iceberg lettuce leaves1 medium cucumber1 tomato slice for garnishFresh coriander sprigs to garnish1 Malta orange, halved 3 tinned pineapple slices, cut into big chunks8-10 tinned red cherries, seeded and halvedFresh Cherries for garnish1 Malta orange, cut into slicesMethod1. Heat 2½ tsps ghee in a non-stick pan, add ½ tsp cumin powder and ½ tsp garam masala. Add baby potatoes, remaining cumin powder, remaining garam masala and salt. Mix well. Cook on high heat for 2-3 minutes, stirring continuously. Transfer half of the cooked potatoes in a bowl.2. Add remaining ghee in a non-stick pan, add cumin seeds, and once they begin to change the colour, add half the cooked potatoes and sauté on medium heat for 2-3 minutes. Set aside.3. Place some lettuce leaves in a serving bowl and transfer second portion of potatoes in bowl. Cut the cucumber into flower, place a tomato slice and serve garnished woth coriander sprigs.4. To make cocktail sticks of first portion potatoes, insert a pineapple chunk, halved cherry and baby potato in a toothpick. Insert 4-5 cocktail sticks on top of orange halves. Add cherries for garnish.5.
